Taco Grilled Cheese Sandwiches Recipe
I don’t know about you, but as a busy mom, I’m always looking for quick easy meal ideas that I know the kids will eat without grumbling about it. If that sounds familiar, this recipe is for you! It is for a taco grilled cheese! Yummy!
I make these Taco Grilled Cheese Sandwiches with leftover taco meat to make things fast and easy. I actually make a big batch of taco meat after I bring the hamburger home from the grocery store, then freeze it flat in a gallon sized freezer bag so I can just quickly break off what I need for recipes like this one! If you do not have any leftovers, simply mix up a taco meat just like you would normally for tacos. Then use it to make this taco grilled cheese and save the leftovers for another night!
To make this gluten-free and dairy for my son with the food intolerances, I use gluten-free bread, gluten-free taco seasoning, dairy-free butter substitute, and dairy free cheese slices. Several taco seasoning brands list right on the package that they are gluten-free to take the guesswork out of it, which is very nice! As for the dairy-free cheese slices, I personally use Daiya Brand Cheese Slices. I found them at my local Safeway store, but any natural foods store should have them as well. If you have a different brand of dairy-free cheese you like, that will work just as well!
Other than the ingredients, the only other thing you need is a good pan/skillet and you are ready to go! I just serve it with a salad or a bowl of soup to make it a complete meal and dinner is done in no time flat! This is a recipe the kids are sure to ask for again!
Taco Grilled Cheese
- leftover taco meat
- sandwich bread
- American cheese slices you could also use a taco blend cheese, if you wish
- salsa or taco sauce for dipping optional
Heat a large griddle or frying pan on medium/high heat.
Butter the outside slices of your sandwich bread and lay a slice face down on the griddle/frying pan.
Place one slice of American cheese on the bread.
Scoop about 1/8 of a cup of taco meat on top of cheese.
Place another slice of cheese on top of the taco meat (it will help hold the meat in the sandwich once it melts) and then top with another slice of bread, buttered side up.
Grill the sandwich until golden brown and the cheese has melted (about 5 minutes on medium heat) and the flip. Grill until golden on the opposite side.
Remove the taco grilled cheese from the griddle and let cool a few minutes before cutting in half.
