Pumpkin Bars Recipe
There is nothing better than the smell of pumpkin treat baking in the fall to celebrate the cooler weather and falling leaves. This Pumpkin Bars Recipe is going to become one of your favorite fall recipes after you get a taste of this soft, sweet, delicious pumpkin-y yumminess!
This recipe is very easy to throw together, and doesn’t take much time at all so you can have a sweet treat without a big time commitment to prep it. You start with your basic supplies including a 9×9 pan or baking dish.
If you have one with a lid, that’s helpful to help keep them nice and moist. (Or you could do 9×13 pan or baking dish if you want them to not be as thick). Then you throw your ingredients together as shown in the recipe, scrape it into the pan, and throw it into the oven!
You will be amazed at how soft these come out, not dense like your traditional bar recipe. The chocolate chips add some sweetness to it, but the Reese’s Pieces candies are what makes this recipe amazing. They blend the flavors of the recipe together to make these Pumpkin Bars a step above any other recipe you will find out there for them.
We only put on about 1/4 cup of the Reese’s Pieces because we didn’t want it to overpower the other flavors in the recipe, but you could always add a few more to your tastes if you wanted to.

- 1 Egg
- 1 1/4 cup light brown sugar
- 1/2 cup white granulated sugar
- 3/4 cup butter (softened)
- 1 tsp vanilla extract
- 1 cup pumpkin puree
- 1/2 tsp pumpkin pie spice
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 3/4 tsp baking soda
- 2 1/4 cups all purpose flour
- 1 1/4 cups dry oats
- 1 1/4 cups semi-sweet chocolate chips
- 3/4 cup pecans
- 1/4 cup Reese's Pieces Candy (can add more to taste)
Preheat your oven to 350° and grease a 9"x9" baking pan (or 9"x13" for a smaller thickness) with a non stick cooking spray
In a large mixing bowl, mix together your softened butter, sugar, brown sugar, egg, pumpkin purée, and vanilla until well mixed
Next mix in your flour, baking soda, salt, cinnamon, pumpkin pie spice, and oats until you have a thick batter
Now fold in your chocolate chip and pecans
Scoop into your baking dish and spread evenly with a spatula
Sprinkle your Reese's Pieces on top
Bake for 30 minutes and let cool
Slice and enjoy!
